The first
“Tequila de Altura”
in the world

Botella de Tequila Alto Canto

Up on the mountain, the wind, the moisture, the air, the trees and the flight of the hummingbird, conspire to create unique flavors and textures for every single batch of tequila Alto Canto.

The "Sierra del tigre" Mountains

Innovation is a tricky thing. Especially in a tequila that aims to respect the purest traditional processes. That’s why it seems unlikely that nobody ever thought of distilling tequila high up the mountain. But yes, indeed Alto Canto is the first one… Up there at the Sierra del Tigre mountains, the air is cleaner, the water is more pure, and the lower atmospheric pressure favors the highest quality tequila ever imagined.

The Alto Canto Process

Only two ingredients:

Pure natural spring mountain water & carefully curated organic agaves.

Organic Agaves

Slow-cooked for 72 hours in our traditional masonry ovens. At this altitude, the cooking process is influenced by a crucial factor: water begins to evaporate at approximately 91°C, enhancing the texture and depth of flavor.

THE TAHONA

Enriched with minerals

Honoring the traditional tequila-making process, the cooked agaves are crushed under the weight of a volcanic rock tahona, extracting their rich juices, which blend seamlessly with pure spring water.

THE WILD FERMENTATION

The hand of Mother Nature

Here, the magic of the mountains unfolds. We embrace spontaneous fermentation, inviting local species of flora and microbes, while nourishing the must’s gentle dance, deepening the soul and intensity of our creation.

THE DISTILLATION

A unique flavor profile

At this altitude, our double distillation in copper stills reveals a bouquet of layered flavors, gently shaping the wild elements into crystalline elegance. The process creates bespoke, soothing heat and lingering flavors intertwined with mineral character; our cuts guide this alchemy, keeping heart at the core.

MATURATION

Worth waiting

For maturation, we use fine American white oak barrels in the cool high sierra, allowing the spirit to breathe with every cycle. Time softens the edges into a perfect equilibrium, mellowing tannins to enhance the delicate aromas: a subtle, naturally refined maturation.

These are some of the reasons why Alto Cantois the first and only “Tequila de Altura”.

But don’t just take our word for it… judge for yourself.
